Summer Corn Salad


Serves: 4
Prep Time: 15 minutes

1 tablespoon lime juice
¼ teaspoon salt
¼ teaspoon hot pepper sauce
4 teaspoons olive oil, divided
1½ cups fresh corn, grilled
1½ cups cherry tomatoes, halved
½ cup finely chopped cucumber
¼ cup finely chopped red onion
2 tablespoons minced fresh basil
¼ cup crumbled feta cheese

Ahead of Time:
  • In a small bowl, whisk the lime juice, salt, pepper sauce and 4 teaspoons oil; set aside.
  • Grill 4 husks of corn, cut from husk, transfer to a salad bowl; add the tomato halves, cucumber, onion and basil.
Just Before Serving:
  • Drizzle with dressing and toss to coat.
  • Sprinkle with cheese.
