New Recipe - Chicken Thighs with Bourbon Barbecue Sauce
9/02/2009Last night's recipe, from Robin Rescues Dinner, was also worth posting. My only modification would be to cook the chicken for about 20 minutes, drain the grease, then cook for another 25-30 minutes with the sauce. It took about 50 minutes for the chicken to cook through for me. The sauce was pretty sweet, so the sweet potatoes I served with this was probably overkill! May go with mashed potatoes next time. Chicken Thighs with Bourbon Barbecue Sauce Serves: 4 Prep Time: 10-15 minutes Cook Time: 35-40 minutes (10 minutes less for boneless) Ingredients Cooking spray 2 pounds skinless chicken thighs salt and freshly ground pepper 1 cup ketchup 1/4 cup bourbon 3 Tablespoons light brown sugar 2 Tablespoons red wine vinegar 2 teaspoons Worcestershire sauce 2 teaspoons reduced-sodium soy sauce 1 teaspoon garlic powder 1/2 teaspoon dry mustard powder Directions
