New Recipe - Chicken Thighs with Bourbon Barbecue Sauce

Last night's recipe, from Robin Rescues Dinner, was also worth posting. My only modification would be to cook the chicken for about 20 minutes, drain the grease, then cook for another 25-30 minutes with the sauce. It took about 50 minutes for the chicken to cook through for me. The sauce was pretty sweet, so the sweet potatoes I served with this was probably overkill! May go with mashed potatoes next time. Happy Cooking!

Chicken Thighs with Bourbon Barbecue Sauce

Serves: 4
Prep Time: 10-15 minutes
Cook Time: 35-40 minutes (10 minutes less for boneless)

Ingredients
Cooking spray
2 pounds skinless chicken thighs
salt and freshly ground pepper
1 cup ketchup
1/4 cup bourbon
3 Tablespoons light brown sugar
2 Tablespoons red wine vinegar
2 teaspoons Worcestershire sauce
2 teaspoons reduced-sodium soy sauce
1 teaspoon garlic powder
1/2 teaspoon dry mustard powder

Directions
  1. Preheat oven to 400 degrees. Coat shallow roasting pan with cooking spray.
  2. Arrange chicken thighs in pan and season with salt and pepper.
  3. In medium bowl, whisk together rest of ingredients. Brush mixture over chicken thighs. Roast for 35-40 minutes (25-30 minutes for boneless) until chicken is cooked through and no longer pink on the inside.
